Banana Bread

FYI... three pounds of bananas are just $1.37 at Costco this week.  That is a very good thing if your family goes through bananas like we do.  The only problem is even with as much as we eat them, there are always a few that go too brown before we can get to them.  I am good at making smoothies with those spotted ones, but I wanted to try something new.  I found this bread recipe online and was happy to see it looked really easy.  I have about 3 more days with the bunch of bananas in the fruit bowl this week, and then I'll try out this recipe.  Hope it's good!

BANANA BREAD RECIPE

INGREDIENTS

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of all-purpose flour

METHOD

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

i was thinking about making banana bread myself, today. i have a great whole wheat recipe that makes me feel less guilty!:) but if i had your figure . . .
